
Good morning! Besides bacon, I think the next best thing is breakfast sausage! Actually, I prefer sausage, but don’t tell anybody. One thing I don’t like about store bought sausage is that it can consist of stuff I can’t pronounce and a good bit of sugar. More recently my thyroid has been acting up causing me some major issues. I started doing some research and have been reading how important it is to regulate your gut health when dealing with thyroid issues. I found the book The 30-Minute Thyroid Cookbook by Emily Kyle (Affiliate Link). In it there are 125 quick recipes for people dealing with hypothyroidism and Hashimoto’s. I couldn’t add this book to my cart fast enough!
When I finally received the book I looked through it briefly, but the American Style Breakfast Sausage recipe immediately caught my eye. I never thought about making my own sausage for breakfast in the mornings! Long story short…the recipe is clean, easy, and tasty! So here we go.
Ingredients needed:
1 pound ground pork
1 teaspoon finely chopped dried sage (I just use ground because that’s what I have on hand.)
1 teaspoon finely chopped dried thyme
1 teaspoon coconut sugar (You can omit this…I have before and it still tasted yummy.)
1/2 teaspoon finely chopped dried rosemary (Do yourself a favor and buy it chopped. Trust me.)
1/2 teaspoon of salt
1/2 teaspoon of black pepper
Extra-virgin olive oil for the pan
**If using fresh herbs double the amounts**

In a large bowl combine all of the ingredients except for the olive oil. I just place mine in my Kitchen Aid mixer bowl and use the paddle attachment.
After the mixture is completely combined, use your hands to shape the sausage into 1 inch balls and then flatten them into patties. Usually I am super lazy and just use a big spoon to scoop the mixture up and drop the sausage directly into the hot pan. For this post I tried to be more refined. LOL. I’ve been living that cast iron pan life so that’s what I use to cook these patties. When the oil is hot place the patties into the pan and cook until they are browned on both sides. Remove the sausage from the pan and place on a paper towel to drain.

SEE! Didn’t I tell you this was super easy! I love to enjoy these sausage patties in all sorts of ways but this morning I enjoyed them with sunny side up egg, spinach, and some Dave’s Killer Bread toast with ghee. Oh and coffee, duh! PS-Don’t judge my spinach…I try to have some sort of greens at every meal. 🙂

I hope some of you will give this recipe a try. You can even change up the spices if you like. Maybe add a little red pepper for a kick?
